Seafood Gumbo

A wonderful combination of fish and shellfish with a Cajun twist.

Ingredients

1 pound shrimp
1 pound scallops
1 pound oysters
1/2 pound lobster
1/2 pound red snapper
1/2 pound okra
2 cups celery
2 cups onion
2 cups green pepper
2 cups red pepper
2 tablespoons cajun spice
1 tablespoon hot sauce

1. In a large skillet, saute celery, onions, green pepper and red peper.

2. In a separate pot, combine shrimp, lobster body and red snapper. Bring to a boil and drain liquid.

3. Add sauted vegetables to liquid, then add 1/2 cup of Justin's Dust (Cajun spice) and bring to a boil.

4. Add seafood base.

5. Add 3 drops of hot sauce.

6. Serve in a bowl by itself or over a bed of white rice.

Serves 20 people.
